What we know about Grass Fed and Finished beef. Cont’d from our last post. “. . . And, according to recent guides, grass-fed animals might help reverse the greenhouse effect. The studies suggest that properly managed pastures store carbon, instead of releasing it into the atmosphere. As for the cattle , they are designed to eat grasses, not grains. A grain-based diet can cause physical problems for cattle, so farmers have to feed the animals antibiotics to keep them from getting sick. But what about the taste! Grass-fed beef tastes “beefier” than regular beef and has a cleaner mouthfeel because of the lack of marbling. ∫: The best choice is 100 percent grass-fed beef. The package may explain how the animal was raised. If not ask your butcher or call the producer. WHERE TO BUY: You can find grass-fed beef at some supermarkets, natural foods stores specialty foods stores, and farmers' markets. Grass-fed beef is also available online. . . . .You can go to eatwild.com or (Order from this web site)
HOW TO COOK: Grass-fed beef can be leaner than comventioally raised beef,so check it frequently while cooking. For moist, tender cuts of met don't cut it pastmedium rare. (February 2008/bonappetit.com. Pg95)
It will cook a little while it is resting and the taste is better than non-grass fed. Remember grass-fed and finished beef is leaner but tastier and better for you.
